Variety description

As early as the late 19th and early 20th centuries, tuberous stachys was known as a vegetable plant in Central Europe. Then, as now, it was also known by the synonyms ‘Chinese artichoke’, ‘Japanese tuber’ or ‘Japanese potato’ – but the species referred to is always Stachys affanis – tuberous stachys. In the garden, tuberous stachys is extremely easy to care for and thrives in many different locations. For an easy harvest, however, the garden soil should not be too heavy, or you should loosen the soil with a little sand. The tubers should be harvested annually; this is the only way to maintain a consistent yield. The white, somewhat misshapen tubers are harvested once the plant has completely died back, which is usually from around November onwards. The tubers should always be harvested fresh, as they dry out quickly when exposed to the air. The tubers of tuberous stachys can be enjoyed fresh or cooked. When eaten raw, the tubers are very crunchy and remarkably juicy. The tubers of the tuberous chervil have a slight kohlrabi flavour with the typical earthy but not pungent notes of a radish.
