The wasabi is like the extra hot brother of the horseradish. Although the two plants are not so closely related - as cruciferous plants with pungent mustard oils as their main ingredients, they do have important similarities.
Wasabi 'Matsum' is in great demand that can hardly be met. For this reason, it is not uncommon for there to be wasabi pastes on the market, for example, which only contain horseradish instead of wasabi. Colored a little green, of course, so you only notice it when it's too late...
When cultivating wasabi, it should be noted that the perennial grows on the edge of swamps in Japan. The following therefore applies: location in half shade to shade, moist soil, high humidity and medium temperatures. In pot culture, fertilization must not be neglected. In addition, the pot is placed on a saucer. Wasabi is not a hotshot when it comes to growth. The pot culture has the advantage that you can better ensure the shady location, because summer sun does not like wasabi at all.
Everything from Wasabi 'Matsum' can be used: leaves, flowers, stems and roots. However, only from the 2nd year and no more than 20% of the plant mass. Wasabi moves in in late fall. After that, the rootstock is well covered with a thick layer of straw or leaves and brushwood. You can do the same with pots or you can place them in a cool greenhouse, shed or garage that is just frost-free and relatively dry.
