Fact sheet

Growth: Broad, upright growth habit; even when grown as an annual, ‘York’ reaches up to 2.5 m wide and 3 m high

Ripeness/Harvest: ripens from the end of August; thanks to its regular flowering, it produces ripe berries right through to October

Fruits: normal-sized, black-brown berries on very large flower umbels; the flowers and berries can be used in the same way as those of black elder

Taste: Typical of elderberries; the similarity to the native elderberry is clearly evident here. The flowers give off a less intense fragrance, but the syrup made from them tastes almost identical

Variety description

The garden elder Howunder® ‘York’ is a perfect berry bush for the garden. Like all Howunder® varieties, Howunder® ‘York’ also flowers and bears fruit on the one-year-old shoots and can therefore be cut back severely every year after winter. Terminal flower umbels form on the new shoots, acting as a real magnet for bees. When in full bloom, the whole shrub is filled with the sound of buzzing and humming. The flower clusters are significantly larger than those of the native elder – the garden elder Howunder® ‘York’ belongs botanically to the North American elder (Sambucus canadensis) – though their scent is slightly less intense. However, the uses of the flowers (in syrup, fried in batter) are identical, and the resulting flavour is also largely the same.

Unlike the Howunder® ‘Ranch’ variety, Howunder® ‘York’ is partially self-fertile and does not require a pollinating partner to set fruit. However, the yield can be significantly increased by planting a second Howunder® variety. In this respect, all three Howunder® varieties on offer are equivalent. The fruits begin to ripen from the end of August, provided, that is, that not all the flower umbels have been used to make syrup. The fruits must be heated before consumption to make them edible. In terms of flavour, the fruits of Howunder® ‘York’ come close to those of the native black elder, but in a direct comparison they are slightly milder and less pungent in taste.
